CANTINA PANTUN: PRODUCER DESCRIPTION

Jutta and Mimmo started Pantun in 2000 as they began a family and decided to start living on what reward the land of Puglia offered for their hard work. Their eight HAs of vineyards are located among the hills of Mottola, a small region near Taranto. They farm organically, and biodiversity and sustainability are guiding principles for them. The result is natural wines of great beauty and grace.  In addition to their plantings of Primitivo and Greco Bianco, they grow olives and fruits. They describe their ecosystem this way- the Mediterranean scrubland is the basis of our ecosystem, with its bushes of lentiscus, rock rose, myrtle and strawberry tree, the holm oak and carob trees rooted in red, rocky, clay and calcareous land. PANTUN ROSATO:

Technical Description: From the clay soil of their Macchia vineyard, Jutta and Mimmo hand harvest the Primitivo grapes for this Rosato from Apulian Bush trained vines in late August. Pantun Rosato is the result of a spontaneous fermentation in small stainless steel tanks, and it ages a further eight months in stainless steel and then rests six months in bottle.

Tasting Notes: Dark cherry red in glass. The nose is concentrated with ripe red cherry fruit, bramble and baking spice. On the palate, this a full-bodied Rosato with attack, the concentrated nose follows thru with equally concentrated flavors, the intense flavors are balanced by refreshing acidity, and the finish is long. This is no pre-dinner sipper, rather this Rosato is a food-wine, and will successfully accompany casual dinner fare like pizza, pasta with sauce, or a burger.

PANTUN ROSSO:

Technical Description: From their Vito Vineyard, these Primitivo grapes are grown in clay and limestone soil from Apulian Bush trained vines. The late August harvest is manual, a spontaneous fermentation occurs in stainless sell, followed by one year of aging in old oak barriques and five months rest in bottle.

Tasting Notes: Pantun Rosso is a dark ruby in the glass. The nose is complex and of black and red fruit, bramble, spice and smoked meat and leather. On the palate the wine is balanced: full-bodied, there are well-defined tannins, adequate acidity, intensely concentrated flavors that follow from the bouquet, and a lengthy finish. A wine to enjoy with an aromatic cheese course, barbecue grilled foods, or curry-flavored dishes.

PANTUN SKIETTO:

Technical Description: From the clay soil Macchia vineyard, Pantun uses a traditional Apulian Bush pruning system for this Primitivo. The wine is the result of an early September manual harvest, twelve to fifteen days of maceration, spontaneous fermentation and eight months of aging in concrete followed by three months of further rest in bottle.

Tasting Notes: Dark ruby red in glass. Ripe red fruit, bramble, and tobacco on the nose. On the palate a full-bodied and balanced wine, pleasantly grained tannins, adequate acidity, and concentrated fruit, spice and savory flavors, followed by a lengthy finish. A robust red wine to pair with an aromatic cheese course, egg plant parmesan, or grilled foods.
